Salvia officinalis 'Purpurascens' A pretty perennial herb with purple, textured leaves and mauve/blue flowers in summer that attract leafcutter bees and long-tongued bumblebees. Hardy and relatively drought resistant and will provide lovely colour during the year or just a great herb in cooking. Trim in spring to encourage new leaves and stop it getting woody. Use: One of the more important kitchen flavourings, sage was once used to help preserve meat. Use in the classic stuffing for meats, or fry whole leaves in olive oil to use as a garnish for many dishes.
