Rumex acetosa. The pale green leaves of sorrel have a distinctive lemony flavour. Harvest when the leaves are small and use in salads and sandwiches as a lettuce substitute. When cooked it is a tasty addition to fish, eggs, and potatoes in soups. Sorrel is frequently used fresh in Asian cuisine.
