Mertensia maritima. This Scottish native is prized by chefs for its oyster-like flavour, which makes a great addition to salads and goes well with many egg recipes. It has blue grey foliage and a show of intense blue flowers in summer, hence its other name - Sea Bluebells. Harvest the leaves from spring until the first frosts of autumn.
