Originating in North America, this is an aquatic plant which is easy to grow and very prolific. Only shallow water is needed so they can be grown in an old sink, tank or even a paddling pool! Use a good quality compost such as John Innes. The tubers mature in autumn when the foliage dies down. When harvesting keep a few tubers for next year's crop.
