Helianthus tuberosus. Native to eastern North America,and a member of the sunflower family, this was a staple food of the American First Nation, then taken to France in early 1600’s. The tubers of this variety have red skin with white flesh. Plant the tubers in winter/spring and harvest in the autumn, leaving some in the ground for next year's crop. Yellow flowers in late summer.
