Apios americana tuberosa - A climbing perennial herbaceous vine, ideal to grow over a trellis or to allow to grow through shrubs or trees. Bears attractive pinkish flowers in late spring, followed by edible seed pods. Gets its name from the bulb-like edible tubers which were once a major food source for Native Americans. The tubers have the culinary characteristics of a potato, although the flavour can be slightly nuttier than a potato and the texture can be finer. Plant in moist, but well-drained soil, sun or part shade. Hardy. Priced for: one tuber
Use: The tubers are white and firm once peeled and best boiled or roasted. as you would a potato. The seeds can be used like peas, raw or cooked
