Cucurbita pepo, Not actually White - But a Very Very pale Light Green and Straight...  A versatile, well-bred French semi-late variety, is a so-called White courgette, but in actuality, it is a pretty, very very light pale, almost a pale lime green cylindrical variety, very fine and smooth, with a sweet, sweet flavour. This rustic variety is very productive, making it an easy-to-grow vegetable for an abundant harvest. In cooking, it is often used sautéed, fried, gratin, soup or stuffed and is, of course, one of the ingredients of ratatouille. Courgettes can also be eaten raw, grated and mixed with other raw vegetables.
