Multiple harvesting through the autumn is required because pumpkins develop and mature at different times as vines grow, but, for the best pink colour, harvest each pumpkin when a strong dark corkiness has developed on the stem at top of the pumpkin. Inside flesh has a dark orange interior, excellent for pies, soups or canning.
